NATURAL WINE?
From the cultivation to the vinification

We produce natural wines
paying particular attention to respect the environment,
creating a genuine expression of the 'terroir'.
Our grapes come from a viticulture without the use of synthetic substances and that seeks to strengthen the natural resistance of plants. We apply a method that allows maintaining an optimal balance of the complex biodiversity essential for the development and health of the vineyard.
The harvest is done by hand with an accurate selection of grapes.

Organic Winery and Grape Growers



Fermentation takes place in a completely natural and spontaneous way with only yeast naturally present in the grapes and without adding sulphites or other substances.
The aging process takes place in an amphora, its spherical shape and the micro porosity of the material, helps a more natural evolution of the wine.

BREZZA DI TERRA
Rosso IGT Toscana
In the vineyard the earth breeze arrives at the sunset, the earth releases the energy captured during the day. 'Earth Breeze' gives this feeling.
GRAPE VARIETY: Sangiovese and Cabernet Sauvignon
HARVESTING AND VINIFICATION: manual in crates. Destemming and light pressing on the day of harvest. Spontaneous fermentation with indigenous yeasts. Maceration in steel tanks for 15 days, followed by light pressing and another 5 days of fermentation.
AGING: french oak barriques, followed by bottle aging.
VINTAGE: 2019 - 2020

GRAPE VARIETY: Syrah e Aleatico
HARVESTING AND VINIFICATION: manual in crates. Carbonic fermentation in steel tanks for 7 days. Pressing and spontaneous fermentation with indigenous yeasts for 7 days.
AGING: amphora, followed by bottle aging.

In the late morning when the sun is at its peak, the vine stops, and now, to relieve the heat, the sea breeze arrives as a gift.
'Sea Breeze' expresses this feeling.
GRAPE VARIETY: Vermentino e Sauvignon
HARVESTING AND VINIFICATION: manual in crates. Destemming and light pressing on the day of harvest. Maceration with native yeasts in steel tanks for 2 days. Light pressing follows. Fermentation in gress amphora for 30 days.
AGING: amphora, followed by bottle aging.

GRAPE VARIETY: Sauvignon
HARVESTING AND VINIFICATION: manual in crates. Destemming and light pressing on the day of harvest. Maceration with indigenous yeasts in steel tanks for 2 days. Light pressing follows. Fermentation in steel tanks for 10 days.
AGING: first aging 4 months in glass, followed by the addition of Sauvignon must. Second fermentation and aging in the bottle for 4 months.

THE FARM
I NOVE FILARI
The winery I Nove Filari is located in the Campagnatico area, Province of Grosseto, in the heart of the Tuscan Maremma with its wild and rural landscape. The vineyard lies on a hillside on a soil
mainly composed of clay and limestone, with southwest orientation.

OLIVE GROVE
AND APICULTURE
About 250 centuries-old olive trees of the Moraiolo, Frantoio and Leccino varieties surround the vineyard. The olives are harvested by hand and cold pressed.
I Nove Filari Extra Virgin Oil is fruity and very aromatic.



Beekeeping in the olive grove without the use of synthetic substances enriches pollination and biodiversity.
The Maremma Millefiori Honey contains many aromas and flavors of the territory, including Rosemary, Sulla and Eucalyptus
